Ingredients

6 tbsp. Plant Based Cooking Creme Naturally Flavored
8 tbsp. Butter, Divided
2/3 C Flour
1/4 C Onion, Chopped
4 C Broccoli Florets (fresh Or Frozen), Cut Into Bite-sized Pieces
6 C Vegetable Broth
6 tbsp. Water
1 tsp. Salt
1/4 tsp. Pepper

Directions

Combine the Plant Based Cooking Creme Naturally Flavored and water. Set aside.

In a saucepan, over low heat, melt 6 tablespoons of butter.

Add the flour and stir until blended, but do not brown.

Remove from heat and set aside.

In a large saucepan, melt the remaining 2 tablespoons of butter.

Add the chopped onion and cook until tender.

Add chopped broccoli, cook and stir for 6 minutes.

Add the vegetable broth, increase heat and bring to a boil, whisking constantly.

Add flour mixture, cook and stir until soup is thickened and bubbling.

Remove half of the volume of soup from the pan and puree it in a blender or food processor. Add the pureed soup back into the pan.

Stir in the Plant Based Cooking Creme Naturally Flavored and water mixture.

Season with salt and pepper to taste, then serve.
