2 tsp. | Diced Tomato |

2 tsp. | Diced Red Onion |
3 tsp. | Yogurt, Plain |
2 tsp. | Salt And Pepper |
Harissa is a Moroccan spice blend of Chile peppers, garlic oil, and spice that is widely available. Recipes are available on the internet to make make your own. You could substitute any chili pepper hot sauce and add garlic, but then it wouldn’t be Moroccan then, would it?

Peel, seed and dice cucumber into 1/4" pieces and dice tomatoes to the same size. |

Mix the cucumber, mint, tomatoes, salt and pepper. |

Mix together with yogurt and check the seasoning level. Re-season if needed. |

In a medium hot pan, melt the butter and brown the roast beef until it is hot. |

When hot, add the Harissa and stir until the roast beef is completely coated. |

Place the warm beef on top of the warmed hoagie flat and top with yogurt mixture. |
