1 Unit Seapak Shrimp Scampi
11 oz Mandarin Oranges
1/2 C Frozen Green Beans, Thawed
2 tsp. Reduced Sodium Soy Sauce
2 tsp. Rice Wine Vinegar, Regular Or Seasoned
2 tsp. Toasted Sesame Oil
4 Slice Romaine Lettuce Leaves
2 tbsp. Fresh Cilantro, Chopped
1/2 C Chopped Peanuts


Prepare Shrimp Scampi according to package directions
Lift shrimp from butter sauce (discard butter sauce if desired) and transfer shrimp to a large bowl.
Add oranges, green beans, cilantro, soy sauce, rice vinegar, and sesame oil. Stir to combine and season to taste with salt and pepper.
Arrange lettuce leaves on a serving platter or individual plates and fill with shrimp mixture. Sprinkle peanuts over top.
